A Healthier Breakfast Sandwich!
I love breakfast sandwiches! They can be so simple and so very delicious! A sandwich like this can actually be a great option for breakfast, especially if you stick to the healthier ingredients in the recipe below.
Some breakfast sandwiches are full of fat, carbs, and calories though. I have to admit, I love a good biscuit or croissant breakfast sandwich with sausage, egg, and cheese. Oh, yum. However, I am sure it is not the best for you, and definitely not on a regular basis. This breakfast sandwich is a great option because it still tastes good, but is better for you. It probably even has less calories than your cold cereal. (That obviously depends on the cereal, but it usually takes about 2 servings to fill up my bowl!)
Using a bit of lean turkey bacon, fat-free cheese, and an egg white keeps the fat in check in this recipe. A multi-grain or whole wheat English muffin is the healthier bread option in this recipe. I used Thomas’ Light Mutli-Grain English muffins and I like them. They actually have less calories than the whole wheat English muffins. I was a little nervous about the fat-free cheese, but really it all tasted great together! Find coupons here.
One of the best things about this breakfast sandwich recipe is how easy and quick it is to make. I think the way the egg is cooked is one of the coolest things about it. Just spray the bowl, pour the egg white in, and microwave for about 45 seconds! Plus, it is the perfect shape and size for the sandwich. So easy! I just used one of my 1-cup ramekins for the egg white, but you could also use a 6-ounce glass custard cup. I have some Pyrex custard cups that work well, or these Anchor Hocking ones would be great too.
Yum. A healthy, delicious, and filling breakfast sandwich. Great for breakfast, lunch, or even dinner!
