How to Freeze Peaches
I love peaches! One of my favorite things to do with my fresh peaches is to freeze them. Freezing them seems to preserve that fresh flavor of the peach and frozen peaches are great to throw into a smoothie or thaw quickly for a desert, pancake topper, or quick snack!
Freezing peaches is just as easy (if not easier) than canning them.
Step 1 – Start with Fresh Peaches
Tree-ripened peaches, available locally at farmer’s markets and orchard stands, will be tastier than commercial-variety peaches that are usually picked before they’re ripe. Select Freestone peaches that are in season from late July through September. They are much easier to pit than clingstone varieties.
Step 2 – Blanch the Peaches
- Bring a large pot of water to boiling.
- Working in batches, carefully lower 3 or 4 peaches into the boiling water for 30 to 60 seconds.
Step 3 – Cool the Peaches quickly
Transfer peaches from boiling water to the bowl of ice water.
Step 4 – Peel the Peaches
Using a knife or just your fingers peel the skin from the peach. It should just slide off!
Step 5 – Remove the Peach Pit
- Using a sharp knife, cut each peeled peach in half around the pit.
- Gently twist each half to separate.
- Using the knife, pry the pit out of the peach.
Step 6 – Slice the Peaches
Using a knife slice the peaches into desired portions. I like to slice mine.
Step 7 – Prepare for Freezing
There are a few different ways to freeze your peaches
1. Water pack– place the peaches in a Freezer storage containers or freezer storage bags and cover with water.
2. Sugar pack – place the peaches in a Freezer storage containers or freezer storage bags, layering the peaches with sprinkled on sugar. Let sit for a few minutes until the sugar turns into juice.
3. Individual Freezing– place the sliced peaches flat on a cookie sheet and freeze. After frozen pop them off the sheet and into a freezer storage bags. This method makes it easier to use just a few out of the bag (like in a smoothie) and freeze the rest for later.
4. Syrup pack – Make a syrup (see below) and pour it over the sliced peaches that are placed in a bag or Freezer storage containers. Allow1/2 to 2/3 cup syrup for each 2 cups peaches.
Very Light Syrup: Use 1 cup sugar and 4 cups water to yield about 4 cups syrup.
Light Syrup: Use 1-2/3 cups sugar and 4 cups water to yield about 4-1/4 cups syrup.
Medium Syrup: Use 2-2/3 cups sugar and 4 cups water to yield about 4-2/3 cups syrup.
Heavy Syrup: Use 4 cups sugar and 4 cups water to yield about 5-3/4 cups syrup.
Step 8 – Freeze Peaches
Seal Freezer storage containers or freezer storage bags according to manufacturer’s directions, pressing out as much air as possible. If you are using Freezer Containers then make sure the rims are clean before sealing them with the lid.
Label each Freezer storage containers or freezer storage bags with its contents, amount, and date. Lay the bags flat in the freezer. Use frozen peaches within 8 to 10 months.

no lemon juice or fruit fresh? do they not turn brown?
You totally could put lemon juice of Fresh Fruit on it, forgot to add that. Mine have not turned brown yet but I put them almost immediately into the bags and press the air out of them. I will add that to the post though, thanks for the reminder. 🙂
I followed the directions above and they froze beautifully. However, once I get them out of the freezer within a VERY SHORT time period they turn brown and nasty…what am I doing wrong? Do I need to Fruit Fresh them once I get them out of the freezer? I did use Fruit Fresh on some of the later batches, but not the first ones. :/ Help!
Yeah, try fruit fresh or a little lemon juice. Fruit fresh will not affect the taste though…
