Green Chili Casserole Freezer Meal Recipe
Warm memories of Mom, yep, that’s what ground beef green chile casserole imparts. It was on her monthly rotation and I always loved it. If you want to vary it, you can swap chicken or pork for beef.
If you want to really get the most out of this recipe, be sure to double or triple it and freeze a few for those extra busy days (find the freezer instructions below). It’s just as easy to layer up three as it is to make one!
Directions
You’ll want to start this recipe by browning your ground beef and onion together in a skillet. After that, drain the fat and set it aside.
Next, we’re going to make our sauce. Combine the chiles, soup, milk, olives, garlic, sour cream, salt, and pepper in a large mixing bowl. Mix that up nicely and you’ve got your sauce!
Now we can start assembling our ground beef green chili casserole. Beginning with the sauce, layer your tortillas, meat, and cheese in a 9×13-inch baking dish. After you’re finished, top it with cheese and bake at 350˚ degrees for 1 hour.
Preparing For the Freezer:
Preparing your green chili casserole for the freezer is easy as pie. First, cover your casserole with parchment paper or plastic wrap, and then cover it with foil as well.
You should also label your casserole with “Ground Beef Green Chile Casserole” and the date you made it. Make sure to print the directions (found below) too so you can easily cook it up when you feel like it.
Prepare after Freezing:
If you’re planning to cook up your frozen green chili casserole, make sure to take it out of the freezer the night before you plan to serve it. Let it sit in the fridge until 2 hours before serving.
After that, preheat your oven to 350˚ degrees and bake your casserole for 1 hour. Serve with a nice crisp green salad and enjoy!

Ingredients
- 1 package corn tortillas
- 1 pound ground beef
- 4 ounce can diced green chiles
- 1 can cream of mushroom soup
- 1 soup can of milk
- 1 can can chopped olives
- 1 clove minced garlic
- 1 chopped onion
- 2 cups sour cream
- salt and pepper to taste
- 1-1/2 cups jack cheese shredded
- 1-1/2 cups cheddar cheese shredded
Instructions
- Brown meat and onion together. Drain fat.
- Combine chiles, soup, milk, olives, garlic, sour cream, and salt and pepper to make sauce.
- Alternate tortillas, sauce, meat, and cheese in a 9 x 13-inch baking dish.
- Top with cheese and bake in preheated oven at 350˚F/175°C for 1 hour.
Preparing for freezer:
- Cover with parchment paper or plastic wrap and then foil
- Label with Beef Green Chile Taco Casserole
- Print baking directions: Bake at 350˚F/175°C for 1 hour
- Label with the date you prepared it
Prepare after freezing
- Remove casserole from the freezer the night before you plan to serve it.
- Let sit in refrigerator till 2 hours before serving.
- Preheat oven to 350˚F/175°C.
- Bake casserole for 1 hour and serve with a crisp green salad. Enjoy!
This recipe is THE BOMB. I changed it up a bit by excluding the cup
Of mild for Chile verde sauce and a dash of green enchilada sauce. I also used Taco Bell Habanero cheese to top my casserole. My family, young to old~er adored it!! It was quick, easy clean up and relatively healthy. A huge thank you for this recipe
