I love making freezer meals for my family. It saves me lots of time and money. This Meatloaf mini recipe is one of our favorite recipes. My children LOVE it. So I thought I would bring it back from our archives to share with all of you new Fabulessly Frugal followers!

Here are the ingredients you will need to make this meatloaf mini freezer meal: Brown sugar, Worcestershire sauce, Eggs, Dry mustard, Ketchup, Onion powder, Garlic powder, Crispix cereal, Seasoning salt, pepper and Ground beef. Note when I do not have Cripix on hand I use half and half of  gluten free corn and rice Chex.

Sometimes I make the minis in a muffin tin. It makes the perfect size for each meatloaf mini.

I prefer to make them on a baking sheet with a sheet of foil underneath for super easy clean up. Check out the image in the collage below to see how easy the clean up is after making these meatloaf minis on a sheet of tin foil.

Tips to avoid touching meat if you think it is gross like I do:

Mix meat and other ingredients in a food processor, kitchen aid or Bosch mixer. Use an ice cream scoop to scoop meat into tins. Makes a perfect shape too!

Sauce Tip:

We really like the sauce so sometimes I make a double batch of it. If I do not make a double batch Sweet Baby Rays BBQ Sauce is really good on the meat loaves.

This is a fun way to mix up the boring meatloaf! This Freezer Meal Recipe can be adapted and baked right on the spot! Utilize muffin tins or just make them into little balls and bake! YUM!

  • In a large bowl, combine ketchup, brown sugar and mustard. Remove 1/2 for topping; set aside.
  • Add eggs, Worcestershire sauce, cereal, and seasonings to remaining ketchup mixture; mix well. Let stand 5 minutes.
  • Crumble beef over cereal mixture and mix well.
  • Using a 1/3 measuring cup form meatloaf minis onto a baking sheet or press into a muffin tin.
  • Bake at 375 for 18-20 minutes.
  • Put reserved sauce into a sandwich bag and place in a gallon size freezer bag.
  • When meat has cooled place it in the gallon freezer bag with the sauce.
  • Freeze for up to 3 months.


  • Thaw completely
  • Place meatloaf minis on a baking sheet.
  • Bake at 350 for 15 minutes, or until thoroughly heated.
  • Drizzle sauce over the meatloaf minis and bake an additional 5 minutes.
  • If you want more sauce, Sweet Baby Ray’s BBQ goes good with this.

  • For April Fool’s Day I made some of these and “frosted” them with dyed (with food coloring) mashed potatoes. My son really thought we were having cupcakes for dinner–surprise! It was fun.

  • I just made some of these tonight using turkey meat and they were so yummy! I think my DH will love them too, we are going to have them for dinner tomorrow.

  • We have made these several times, and the family loves them. We add frozen Spinach to sneak in the vegetable. This is a good way to get my daughter to eat her greens.
    I use my Pampered Chef cookie scoop, and either bake in regular muffin pans, or use the mini muffin pans for bite-sized meatballs. Either way, it’s Yummy!

  • If you only put 1 cup Ketchup 1 tsp mustard and 4 T brown sugar in the large bowl how do you set aside 3 cups for topping??? You have me all turned around on this one. It’s the only recipie I have had any confusion on this website so far and it seems like it should be so simple. Maybe Im supposed to do 3 cups Ketchup but, that would be a lot of ketchup and not a lot left over into the meatloaf itself ater topping.

  • Could this same recipe be used in the Mini disposable foil pans? DH loves cold meat loaf sandwiches the day after. I can achieve two meals with one mini meatloaf.

    • Yes, you could use the loaf pans. You will want to increase your cook time if you are cooking a larger volume of meat. Your hubs is gonna love this meatloaf!

  • Is one mini one serving? Or do you do more, like 3 in the pic, for one serving?

  • Perfect idea to add spinach and the mashed potatoes “frosting”. I am going to do both and freeze. Perfect to take to college student to get her to eat a real meal.
