Coconut Oatmeal Cookies

These cookies are one of my new favorites! If you love a good chewy oatmeal cookie as well as coconut, these things are awesome!  A new favorite for the whole family, even for my husband, who prefers chocolate over oatmeal any day.  Though, I bet they would be pretty tasty with chocolate chips in them as well…or craisins and white chocolate chips!

Makes 24 large cookies for less than $0.10/cookie

INGREDIENTS:

1 cup butter – ($1.00)

1 cup sugar

1 cup brown sugar

2 eggs – ($0.20)

2 tsp. vanilla

1 tsp. salt

1 tsp. baking soda

1 tsp. baking powder

2-2 1/2 cups flour

2 cups oatmeal

1 1/2 cups coconut – ($1.10)

DIRECTIONS:

Cream together butter, sugars, eggs and vanilla.

IMG_7631Add in remaining ingredients and mix well.

Drop by spoon full on ungreased cookie sheet.  I like to use my large ice cream scoop, as it seems to make the perfect sized cookie.

Bake at 375 degrees for about 10-15 minutes.
