Cinnamon Bun Popcorn Recipe
If you’re someone who enjoys an ooey gooey cinnamon bun every once in a while (Me!), you’re going to love this Cinnabon popcorn recipe. It’s packed with all the delicious flavors of a regular cinnamon bun, except it’s bite-sized.
On top of that, this recipe is pretty easy and quick to put together. You can even use a plain variety of microwave popcorn to make it quicker.
I’ll be honest, when I first tried this recipe, I wasn’t quite sure if I’d like it or not. I’ve tried other popcorn variations before, but this one seemed like it was going to be too sweet! After trying it though, I really enjoyed it. It’s not too sweet, it’s just right.
How to Make It
Like I said above, this recipe is pretty easy. It will take around 20 minutes or so to get everything prepared though so make sure you have enough time.
To make it, just microwave up the cinnamon caramel mixture, pour it over the popcorn and stir to coat. Then bake it and drizzle almond bark over it all. Yum!
Final Thoughts
This cinnamon roll popcorn is a fantastic holiday treat to have around for the family or to take to the neighbors and friends. I have yet to meet someone who doesn’t like it! Package it up in a cute tin or bag and it makes a great little gift!

Cinnamon Roll Popcorn Recipe (Cinnabon Popcorn)
Ingredients
- 12 cups popped plain popcorn about 1/2 cup un-popped kernels
- 1 cup chopped pecans optional
- 1 cup brown sugar
- ¾ teaspoon cinnamon
- ½ cup butter
- ¼ cup light corn syrup
- 1 teaspoon vanilla
- ½ teaspoon baking soda
- 6 ounces almond bark about 3 squares
Instructions
- Preheat oven to 250°F/120°C
- Place popcorn and pecan in a large bowl and set aside.
- Combine the brown sugar and cinnamon in a medium microwave safe bowl (at least 2 quart size). Mix well. Cut the butter into chunks and place on top of the sugar mixture. Pour corn syrup over it all. Microwave on high for 30 seconds, stir, then microwave for another 2 minutes. Stir. Microwave for 2 more minutes.
- Remove from microwave and add the vanilla and baking soda. Stir to combine. Pour the caramel mixture over the popcorn and stir well to coat.
- Spread popcorn mixture onto a foil or silicone lined rimmed baking sheet. Bake for 30 minutes, stirring every 10 minutes.
- Remove the pan from oven and spread the popcorn out on a large piece of parchment, waxed paper, or greased/sprayed foil.
- Melt the almond bark according to the package instructions. Drizzle it over the popcorn. Let the almond bark cool until it is set and hardened. The break the popcorn apart and enjoy!

I made this today. I substituted the butter with coconut oil (cup for cup), and instead of corn syrup I used maple syrup (give it that warm, rich taste). It’s a great idea though and I was craving it! Thank you for sharing this.

Where does one buy almond bark?
I have been able to find it at most grocery stores – usually near the chocolate chips.
