Bacon & Spinach Quiche…

If you’ve never made a quiche before you should… Not only are they super easy to make… you can bake them ahead of time and pop them into the freezer.  All you need to do is let the frozen quiche thaw overnight and warm it up in the oven before serving.

Start with 4 cloves of minced garlic, 1 chopped onion and 2 tablespoons of butter.

Saute until golden brown.

Add 2 tablespoons of butter and stir together.

After your ingredients are incorporated set aside in a large bowl.

Chop 6 cups of spinach and saute.

The spinach should look like this.

Combine the onions, 6 eggs, 1/2 cup chopped cooked bacon, and a 1/2 cup feta cheese into your bowl..

The original recipe calls for 1/4 cup parmesan cheese… but I didn’t have any so I substituted the parmesan with 1/4 cup “Italian Blend” cheese from my freezer.

Combine.

Fold in the spinach.

Pour your mixture into a homemade pie crust or one you’ve bought from the store.

Place in the oven on a baking sheet lined with parchment paper.

Bake @ 350 degrees for 50- 60 minutes until golden…

Let cool…

Breakfast is served!
