DIY Buttermilk
I don’t buy buttermilk on a regular basis, but sometimes I find myself needing a cup here or there in a recipe. Â Instead of running off to the store to buy some, I do this little trick. Â All you need is a bit of lemon juice, and regular milk, and you can make your own substitute for Buttermilk! Â The vinegar curdles the milk, and makes it resemble buttermilk. Â It unfortunately does not have the same effect in making fluffy buttermilk pancakes, but they do taste about the same.
INGREDIENTS:
about 1 Tbsp Lemon Juice to 1 cup Milk
DIRECTIONS:
Simply add the lemon juice to the buttermilk, stir up a bit, and let sit for 5-10 minutes.
Use in your recipe as directed.

All you need is a bit of lemon juice and regular milk. Then your instructions say “The vinegar curdles the milk.” You might want to fix the statement to read lemon juice. Just threw me off for a minute.
