My family enjoyed this slimmed-down comfort food classic, baked macaroni and cheese with broccoli!

This baked macaroni and cheese dish doesn’t take long to prepare, especially since you just cook the broccoli right along with the pasta. Then you just whip up the sauce, sprinkle on some toppings, and bake it all together.


The sauce is from scratch, but still easy. Well, it isn’t as easy as just adding butter and milk, like the boxed macaroni cheese mix. But really, it is still easy enough. Butter, onion, flour, milk, broth, cheese, salt, and pepper. You can handle that, right?

When there is a good pasta coupon and/or sale, I like to stock up on the pastas that offer a little more nutritional value, like Barilla Plus. For the broccoli, I bought about 1-1.5 pounds of fresh broccoli crowns. Then cut the florets into bite-size pieces and discarded the stalks.

Skinny Baked Macaroni and Cheese with Broccoli Recipe

Serves: 8 servings


  • 12 ounces high fiber elbow pasta
  • 1 1/2 tablespoon butter
  • 1/4 cup minced onion
  • 1/4 cup flour
  • 2 cups skim milk
  • 1 cup fat free chicken broth or vegetable broth
  • 8 ounces reduced-fat sharp cheddar cheese (Cabot 50%)
  • salt
  • pepper
  • 12 ounces fresh broccoli florets, cut to bite-size
  • 2 tablespoons grated Parmesan
  • 1/4 cup seasoned bread crumbs


  1. Cook pasta and broccoli together in a large pot of salted water, according to pasta package directions for al dente. Spray a 9x13 baking dish with cooking spray. Preheat the oven to 375.
  2. In a large skillet or pot, melt butter over medium heat. Add onion and cook for about 1 minute. Add flour and cook another minute, or until the flour is golden and well combined. Whisk in the milk and broth, bring to a boil, cook about 5 minutes or until the sauce becomes smooth and thick. Season with salt and pepper.
  3. Remove from heat. Add cheese and mix well until cheese is melted. Salt and pepper to taste. Add the cooked pasta and broccoli and mix well. Pour mixture into baking dish. Top evenly with Parmesan and bread crumbs. Spray cooking spray on top.
  4. Bake for 15-20 minutes, then broil for a few minutes to brown the bread crumbs.
