Since many of you will be camping during the 4th of July, I am going to share a few more camping recipes this week. We will be BBQ’n and likely playing sand volleyball. Then out the Meridian Speedway for the fireworks in the evening. What are your 4th of July traditions?

This is another fabulous campfire cooking recipe using dutch ovens from my friend Ryan. It is a basic cobbler recipe that can be modified depending on the type of cake or fruit that you like. Some ideas are cherry pie filling with chocolate cake, yellow cake and canned cherries, or apple and blueberries with yellow cake. You can also make an Apple Pie Cobbler just make and apple pie filling and mix it with yellow cake.

This recipe feeds about 25 people. You can modify this recipe to feed less if you cook in a smaller dutch oven. Just scale down the recipe to fit in the smaller oven.

Supplies you will need:

16 inch dutch oven
32 charcoals
Tongs to move hot coals
mixing and serving spoon
Charcoal Lighter Basket
Dutch Oven Lid Lifter

Dutch Oven Peach Cobbler

Serves: 25 servings

Ingredients

  • 2 boxes cake mix
  • 3 quarts of peaches
  • 1 can Sprite
  • 1/2 cup butter
  • 16 inch dutch oven

Instructions

  1. Heat coals on the fire.
  2. In a 16 inch dutch oven add peaches then cake mix and smooth over peaches.
  3. Pour Sprite over the dry cake mix and mix together over the peaches. Once all powder is moist evenly put pats of butter over the top of the mixture. This will give the cobbler a nice golden brown top.
  4. Move dutch oven to 13 hot coals in a checkerboard pattern. Cover oven and put 19 hot coals on top. This will give you about 320 degrees.
  5. Cook 45 minutes. Remove lid. Serve with vanilla ice cream or whip cream.

Notes

You can modify this recipe to feed less if you cook in a smaller dutch oven. Just scale down the recipe to fit in the smaller oven.
