I love my air fryer because it is so easy to make complete meals in minutes.  Today’s recipe is going to show you the power of cooking in the air fryer that goes beyond reheating leftovers or making fries in the air fryer.

This teriyaki chicken recipe is super awesome because you only need a couple of ingredients to get a full and complete meal. I love to enjoy this chicken sheet pan dinner with some rice. But first, to make a chicken teriyaki dinner, you will need these ingredients:

  1. 1-2 chicken breasts
  2. Veggies of choice (zucchini, bell pepper, yellow squash, red onion)
  3. Teriyaki sauce (store bought or homemade)
  4. 1 tsp cornstarch

Chicken is a good source of protein. However, pairing the chicken with teriyaki sauce really increases the amount of salt, sugar, and carbohydrates. Especially if you buy a store-bought teriyaki sauce. Store-bought teriyaki sauce is packed with processed ingredients and a lot of sodium.

Because of this, I love to make a simple homemade teriyaki sauce. This sauce is incredibly easy and simple. Plus you only need these 7 ingredients.

  • ½ cup pineapple juice
  • ⅓ cup low-sodium soy sauce
  • 1 tbsp molasses
  • 1 tbsp brown sugar
  • 1 tbsp rice vinegar
  • 1 tsp minced garlic
  • ¼ tsp dried ginger

All you need to do is mix the ingredients together in a small bowl until they are well combined! This homemade teriyaki sauce is one of my favorites because it is packed with great flavors!

Of course, homemade teriyaki sauce still has its own sugars and sodium. But you actually know everything that is in it. This gives me a lot more piece of mind when I make and eat teriyaki chicken.

One pot dinners are great because they are normally packed with everything you need- the vegetable and the protein. This homemade teriyaki chicken recipe is no exception. The best part about this recipe is that you can easily adapt the ingredients and the instructions will still work for any one pot dinner recipe in the air fryer!

Preparing the vegetables

First, to make teriyaki chicken you need to prepare the ingredients. Cut the vegetables of your choice into bite sized pieces. Then, place all the vegetables in a bowl, and add in the teriyaki sauce. You want to make sure the veggies are evenly coated by the sauce. Be sure to reserve some of the teriyaki sauce for the chicken and for a dipping sauce.

Vegetables in the air fryer usually have a similar cooking time to each other. However, vegetables like potatoes, sweet potatoes, and squash, usually take a little longer to cook. Keep this in mind anytime you are cooking vegetables together in the air fryer.

For this recipe, because I used zucchini, bell pepper, yellow squash, red onion, I will want to keep an extra eye on my yellow squash to make sure it will be all the way done cooking.

Place all the vegetables in the air fryer and cook at 380 degrees Fahrenheit or 193 degrees Celsius for 10 minutes.

If you are new to the air fryer, don’t feel overwhelmed by this recipe. It is so easy! Making juicy air fryer chicken is so simple and is actually one of the best beginner air fryer recipes to make. And because we are making a sheet pan dinner, you will be so impressed with how quickly this one comes together!

Once the vegetables have cooked for about 10 minutes, open the air fryer basket and test the vegetables with a fork. You should notice that they are almost done cooking. At this point, we will add in the protein – or the teriyaki chicken for our recipe – and cook the raw chicken with the vegetables. This way, the vegetables finish cooking and the teriyaki chicken will taste amazing.

Can you air fry teriyaki chicken?

Depending on how many chicken slices you have you may need to cook the chicken in batches. To do this, place as many chicken slices as you can in a single layer on top of the veggies. Then, cook the teriyaki chicken in the air fryer for 8 minutes at 380°F/193°C, flipping at the halfway point.

After 8 minutes the chicken should register around 165°F/74°C at an internal temperature. Remove the chicken and tent it in foil. Check on the vegetables. If they are done cooking, also remove them from the air fryer basket. Place the vegetables in a bowl, and cover it with tin foil to get the vegetables warm.

If you have remaining chicken slices, place them in the air fryer basket and cook for 8 minutes at 380F/193C, flipping at the halfway point. Just like you did before.

Another way to cook chicken in the air fryer

Another option to air frying chicken is to layer the chicken on top of each other so that it all fits in the air fryer basket in one batch. If you do this, you may need to cook the chicken longer than 8 minutes at 380°F/193°C. Just keep an eye on the chicken. Check on the chicken at the halfway point and use an instant read meat thermometer to gauge whether the chicken is done or not. The chicken will reach an internal temperature of 165°F/74°C when it is fully cooked.

Homemade Teriyaki Chicken Dipping Sauce

You want to make sure that there is about a 1/2 cup of teriyaki sauce left to make a simple dipping sauce for the chicken and vegetables. Take the remaining sauce, and add in about 1 tsp of cornstarch. Mix the two together in a small bowl and microwave it for about 1 minute 30 seconds to thicken the sauce.

Homemade teriyaki sauce

Instructions

  • Make homemade teriyaki sauce by mixing the ingredients together in a small bowl.
  • Chop up the vegetables in 1-2 inch cubes.
  • Pour some of the homemade teriyaki sauce over the veggies, until all the vegetables are coated evenly.
  • Place the vegetables in the air fryer basket and cook at 380F/193C for 10 minutes. Optional: You can use a silicone basket to cook the vegetables. This would keep the teriyaki sauce from going to the bottom of the basket.
  • While the vegetables cook, cut the chicken into ½ inch thick slices. Stir in the teriyaki sauce, use enough to coat the chicken, but keep some (about ½ cup) to use as a glaze once everything is done cooking.
  • Lay the chicken on top of the vegetables. (With the chicken you can either lay them on top of each other or cook them in batches if they do not all fit inside the air fryer basket). Cook for 8 minutes at 380F/193C, flipping at the halfway point.
  • With remaining teriyaki sauce, there should be about ½ cup left. Add in about 1 tsp of cornstarch. Mix it together and microwave for about 1 minute 30 seconds to thicken the sauce.
  • Remove contents from the air fryer basket and place in a bowl. If you have any remaining chicken, cover the bowl with tinfoil to keep the food warm. Cook the remaining chicken in the air fryer basket at 380F/193C for 8 minutes, flipping halfway.
  • Add the chicken to the rest of the vegetable and chicken mixture. Enjoy with rice or quinoa, and teriyaki sauce.

I made it for my daughter and family and it’s all but gone❣️ A tiny tiny bit is left, not even enough for a serving but I kept it anyway. 😊 Served it over rice and added edamame for color. I cooked it separately. The crowning glory was the homemade teriyaki sauce. If you’re thinking about using store bought—don’t! I used juice from crushed pineapple and added some of the fruit. Had to use 2 t. Corn starch to make it thicken enough. Soooo good. Thank you so much Cathy. 🥰🤗♥️
