Alabama Mac & Cheese
I’m in the mood for comfort food today, so this is what I’m making for dinner. I rarely make this because it’s not exactly the healthiest thing to feed my family, but man-o-man is it delicious!
Ingredients
8 ounces medium shell macaroni, cooked and drained
1 can (10-3/4 oz.) condensed cream of mushroom soup
2-1/2 cups shredded cheese (use a combination of cheddar, monterey jack, colby jack & pepper jack for a kick) divided
3/4 cup mayonnaise (NOT Miracle Whip)
1/2 cup milk or half & half
1/4 tsp garlic powder
salt & pepper to taste
Instructions
- Preheat oven to 375°
- Combine all ingredients except 1/2 cup cheese in large bowl. Turn into 9-inch baking dish. Sprinkle with remaining 1/2 cup cheese. Bake 30 minutes or until heated through.

Just a little sprinkle of Romano cheese for decoration!
We throw in smoked bacon cheddar cheese and sometimes a can of tuna or chicken!

Yummy! and nearly free! I used free pasta, free can of campbells soup, $.25cent jar of mayo, and shredded cheese I got for $1.19. A meal for less than $2.00!
I’m making it now, think I’m going to put some Panko bread crumbs on top for alittle crunch.
How many does this serve? 8 oz of pasta just doesn’t seem like much. Should I double it and put it in a 13×9?
I know this is probably a silly question but I was wondering if the freezer meals including this one, are the assembled and then frozen of are they cooked first?

Most freezer meals are cooked and then frozen. If you decided to try freezing this one you would want to under cook the noodles slightly so they do not get too mushy when you reheat.

Made this for dinner tonight and both my boys and my husband loved it! I doubled the recipe and cooked it in a 9×13 for 40 minutes. Turned out awesome! Thanks so much for sharing this recipe!
