Alabama Mac & Cheese

I’m in the mood for comfort food today, so this is what I’m making for dinner. I rarely make this because it’s not exactly the healthiest thing to feed my family, but man-o-man is it delicious!

8 ounces medium shell macaroni, cooked and drained
1 can (10-3/4 oz.) condensed cream of mushroom soup
2-1/2 cups shredded cheese (use a combination of cheddar, monterey jack, colby jack & pepper jack for a kick) divided
3/4 cup mayonnaise (NOT Miracle Whip)
1/2 cup milk or half & half
1/4 tsp garlic powder
salt & pepper to taste


  1. Preheat oven to 375°
  2. Combine all ingredients except 1/2 cup cheese in large bowl. Turn into 9-inch baking dish. Sprinkle with remaining 1/2 cup cheese. Bake 30 minutes or until heated through.
