Thai Style Chow Mein
I just got back from Maui (luckily we left just days before the tsunami!) and I have to say, the food there was the highlight of my trip! I won’t mention how much weight I gained in 6 days because you probably wouldn’t believe me, but that is partly due to this little restaurant called Aloha Mixed Plate. To. Die. For. Seriously I am still dreaming about their Kalua Pig Grilled Cheese sandwich w/ garlic fries. If you ever head to Maui, eat there. Trust me!
I wish I could find the top secret recipe for that sandwich, but sadly I can’t. So for now this delicious recipe for Thai Style Chow Mein will have to do. I realize it is not a typical stockpile recipe, but it’s so yummy it’s worth it! Plus, the Thai Peanut Sauce is so versatile you can use it not only in this recipe, but also as a delicious dipping sauce! One of the best things about this recipe, besides how amazing it tastes, is how quickly and easily it can be prepared which makes it perfect for a quick dinner after a busy day. This is also a great recipe to have the kids help with since they can mix the sauce while I am prepping the vegetables and tossing everything in the pan. In fact, if I know that we have a jam packed few days coming up then we can easily make the Thai Peanut Sauce ahead of time and store it until I am ready to cook everything. Have an especially crazy day? You could easily prep the vegetables prior to dinner and have them in a plastic zipper bag or sealed container so you could pour them straight into the pan to saute and get dinner to the table within a matter of minutes!

Is it really supposed to read 1 1/2 lbs peanut butter? I’m getting ready to make this right now and that seems like an awful lot!! 🙂 Cheri
Yeah I’m wondering the same thing, lol.
It is correct. That is what the recipe calls for. It comes out to about 2.5 cups.
I made it once, and I think that is the recipe for the restaurant for a day.
It makes way too much, but you can cut all the ingredients, or make extra and serve with all kinds of dishes, like various noodles, and chicken kababs, etc.
It is so good
