- 2 cups fresh baby spinach
- 1 cup canned unsweetened coconut milk (lite or regular)
- 1 cup water
- 3 cups frozen pineapple chunks
- 2 tablespoons unsweetened coconut flakes (optional)
- Add spinach, coconut milk, water, and coconut flakes (if using) to a blender and blend until smooth. Add pineapple and blend until smooth.
If too thick, add small amounts of more water or coconut milk until reaches desired consistency.
