Chicken Caesar Pasta Salad Recipe (With Homemade Dressing)

Serves: 8-10 servings

Ingredients

  • Salad

  • 12 ounces pasta
  • 10 1/2 ounces grape tomatoes
  • 6 to 8 slices of bacon, cooked and chopped
  • 2 cups bite-size cubed, cooked chicken
  • 2 cups chopped romaine lettuce
  • 1 cup fresh grated Parmesan cheese
  • 2 tablespoons chopped fresh parsley
  • Caesar Salad Dressing

  • 1/4 cup olive oil
  • 2 tablespoons white wine vinegar
  • 1 tablespoon fresh lemon juice
  • 1 clove garlic, minced
  • 1/8 teaspoon salt
  • 1/8 teaspoon pepper
  • 1/2 teaspoon Worcestershire sauce
  • 1/2 teaspoon Dijon mustard
  • 1/16 teaspoon hot sauce
  • 1/2 cup real mayonnaise (or 1/4 cup mayo and 1/4 cup plain Greek yogurt)

Instructions

  1. Cook pasta to al dente in salted water, according to package directions.
  2. Toss all salad ingredients together in a large bowl.
  3. In a small or medium bowl, whisk together dressing ingredients until well combined.
  4. Pour about 3/4 to 1 cup of salad dressing over the salad ingredients and toss to combine. Serve with lemon wedges, if desired.

Notes

To make in advance, toss everything together except the lettuce. Add lettuce and toss when ready to serve.
