2-3cupslow sodium chicken brothdepending on the type of rice used
2 cupsbroccoli floretschopped into bite-sized pieces
1 cupshredded cheese
1 tbspfresh parsley
salt and pepperto taste
Instructions
In a large skillet, heat the olive oil over medium heat. Add the chopped onion and saute for 2-3 minutes. Stir in the garlic and saute for about 30 seconds, until fragrant.
Stir in the uncooked rice, cream of chicken, and 2 cups of chicken broth. Bring to a boil, reduce the heat, cover, and simmer until the rice is fully cooked, stirring occasionally, about 15 minutes. Add more chicken broth, if needed. Season with salt and pepper to taste.
Steam the broccoli in the microwave with 2 tablespoons of water for 2 minutes. Drain the water and add the broccoli to the skillet with ½ cup of cheese and the cooked turkey or chicken. Cook for about 2 minutes, until the broccoli is tender to your liking.
Sprinkle remaining ½ cup of cheese over the top. If desired, place the skillet under the broiler or place the mixture in the air fryer for a few minutes, until the cheese melts and starts to brown.
Notes
If you would like to use raw chicken, cut the chicken into bite-sized pieces, season with salt and pepper, and add the chicken to the skillet with the onion.
