4cupsmixed vegetableszucchini, eggplants, tomatoes, bell pepper, red onion, all cut into bite sized pieces

1/2-1tablespoon oil of choice
2teaspoonsHerbes de Provenceor Italian Seasoning
In a large bowl, mix together the vegetables with olive oil, garlic, balsamic vinegar, salt, and pepper. Optional: add maple syrup and herbes de Provence.
In a separate bowl, mix the gnocchi together with 1/2 -1 tablespoon of oil of choice. You just want to make the gnocchi covered in oil, but not too much. Season with salt and pepper.
Place the vegetables in the air fryer basket then add the gnocchi on top. Cook everything at 400°F/200°C for 15 minutes or until everything reaches desired crispiness. Be sure to stir at the halfway point.
