Prepare the Vegetables. Cut the red potatoes into bite sized pieces. Then, cut the brussels sprouts in half.
Combine the potatoes and brussels sprouts in a large bowl with 2½ tablespoons of avocado oil and 3½ tablespoons of Maple Bacon Seasoning. Mix together until everything is evenly coated.
Place brussel sprouts and potatoes in the air fryer basket and cook at 350 °F for 5 minutes.
While the vegetables are cooking, take the salmon fillets and brush on both sides with the remaining 1½ tablespoons oil, and season with the remaining 1½ tablespoons Maple Bacon Seasoning.
Stir the vegetables in the air fryer basket. Add the salmon on top and cook for an additional 8-10 minutes at 350 °F, or until the salmon reaches 145 °F and flakes easily with a fork.
Remove the salmon from the air fryer basket. Test the brussel sprouts and potatoes with a fork. If done, remove from the air fryer basket and enjoy. If not, keep cooking in 1-2 minute increments until they reach desired tenderness.
