Mix 1 tbsp olive oil, 1 tbsp lemon juice, and 1/2 tsp zest in a large bowl. Add in the potatoes and stir to coat in seasoning.
Use tongs to transfer the potatoes from the bowl to the air fryer basket. You will use the remaining juices again later.
Air fry for 10 minutes at 380 °F.
Add the potatoes back into the lemon juice and oil bowl. Toss with 1 1/2 tsp greek seasoning, oregano, and pepper. Stir until the potatoes are completed covered again.
Place the potatoes back in the air fryer basket and cook for 5 minutes at 400 °F, or until the potatoes are roasted to your liking.
