Cook the bacon in the air fryer or on the stove top. Chop into bite size pieces or bits.
Butterfly cut each chicken breast. If needed, flatten the chicken breasts to even thickness with a meat pounder, in between parchment paper or plastic wrap.
Spray the chicken breasts, inside and outside, with oil.
Season liberally with BBQ seasonings, make sure to get the inside and outside of the chicken. Rub the seasoning into the chicken.
Add about 1/4 cup of mozzarella cheese to one side of each chicken breast. Add the bacon bits to each chicken breast. If you have leftover bacon bits, save for topping later.
Fold the other side of the chicken breast over the cheese and bacon to close it.
Place in the air fryer basket and cook for 13 minutes at 380 °F (flipping at the half way point.)
Remove the basket and brush or spoon on the bbq sauce, along with any extra cheese and bacon bits you’d like and place the chicken back in the air fryer for another 3-5 minutes or until the chicken reaches the safe internal temperature and your desired doneness.
