Mix together all the spices plus ¼-½ cup sugar (do the sugar to your taste) in a medium bowl. Set aside.
Put the remaining 1 tablespoon sugar and softened cream cheese in a small bowl. Use a fork to mash cream cheese to combine.
Unroll the crescent dough. Evenly place a tablespoon of the cream cheese mixture every couple inches from each other on on the crescent dough. You'll be able to put 12-16 cream cheese centers on the dough (this will depend on how thick you want the gingerbread bites to be). Note: Just make sure the cream cheese is spaced far enough apart that you will be able to completely cover the cream cheese with the crescent roll dough.
Take a knife or a pizza cutter and cut the dough evenly into squares around the cream cheese.
Gently fold crescent dough to cover cream cheese.
Dip and cover the bites with the spice mixture.
Place bites into a lightly sprayed air fryer basket on parchment paper for 8 to 9 minutes at 350°F/175°C.
Remove from the air fryer basket and enjoy immediately!
