Dinner in a Pumpkin + More Halloween Dinner Ideas

Ingredients

  • Dinner in a Pumpkin

  • 1 medium Pumpkin {about the size of a soccer ball}
  • 1 medium Onion, diced
  • 1 Tbsp Garlic. minced
  • 2 Tbsp Olive Oil {you can use vegetable oil}
  • 2 lbs Ground Beef or Ground Turkey
  • 1/2 cup milk
  • 1 Tbsp Soy Sauce
  • 1 Tbsp Brown Sugar
  • 1 {4 oz} can Mushrooms or fresh mushrooms
  • 1 {15 oz} can Cream of Mushroom (or Cream of Chicken)
  • 2 cups Cooked Rice

Instructions

  1. Preheat oven to 350 degrees.
  2. Start cooking your rice.
  3. Cut off top of Pumpkin and clean out seeds, scrape inside clean.
  4. Saute onion and garlic in olive oil
  5. Add ground beef or turkey, cook on medium until fully cooked.
  6. Add brown sugar & soy sauce, stir until sugar is dissolved
  7. In a large bowl add mushrooms, cream of mushroom and milk.
  8. Add rice when it is cooked. Stir until fully mixed.
  9. Add meat mixture. Stir until fully mixed.
  10. Fill pumpkin with rice/meat mixture. Put the top back on the pumpkin & place pumpkin on cookie sheet.
  11. Bake at 350 degrees for 1 hour. This can vary depending on the size of your pumpkin. It is done when you can easily scrape pumpkin out from the inside to serve with the meat and rice.
