Ingredients
Veggies
- 2 small zucchini squash (about 12 oz each), cut into bite sized pieces
- 2 small yellow squash (about 12 oz each), cut into bite sized pieces
- 1 bell pepper, cut into bite sized pieces
- 1 head of broccoli, chopped into bite sized pieces (about 4 cups chopped)
- 1 small red onion, chopped into bite sized pieces
- 1 1/2 lbs chicken, cut into bite sized pieces
- 1-2 cups cherry or grape tomatoes, halved
Marinade
- 1/3 c. balsamic vinegar
- 3 tablespoons olive or avocado oil
- 1-2 tablespoons honey
- 1 teaspoon dried basil
- 1/2 teaspoon dried oregano
- 1 teaspoon coarse kosher salt
- 1/2 teaspoon pepper
Instructions
- Chop veggies & chicken into bite sized pieces and stir together in a large bowl
- In a separate bowl, blend marinade together
- Stir marinade into veggies & chicken and marinate for 15 min-2 hours.
- Cook half batch for 370°F/187°C for 12 min (stirring once at halfway point)
- Cook for 5 more minutes at 400°F/204°C or until chicken registers 165°F/74°C & veggies are desired tenderness.
