Cut each of the mozzarella cheese sticks in half. Freeze the sticks for at least an hour in a Ziploc safe bag.
Set up three small, shallow bowls for breading the mozzarella sticks
In the first bowl, mix together the flour, salt, and pepper. In the second bowl, lightly beat 1 egg. In a third bowl, mix together the panko, Italian seasoning, and garlic powder.
Coat each of the mozzarella sticks in the flour mixture, the egg, and then the panko. Lightly press the coating to the mozzarella sticks to help it adhere.
Place the mozzarella sticks on a lined baking sheet and freeze the mozzarella sticks for at least 1 hour.
Keep the leftover panko mixture. In a small bowl, beat the second egg.
Take the mozzarella sticks out of the freezer and dip them in the egg, then coat them in the panko mixture again.
Freeze the mozzarella sticks for at least another 30 minutes.
When you are ready to cook, lightly spray the air fryer basket and place the mozzarella sticks in the air fryer. Lightly spray with oil and cook at 400°F/200°C for 7-10 minutes. Check on them halfway through cooking.
They will be done cooking once the outside is crispy and the inside is no longer frozen.
