Peel the potatoes and cut them into ¼-½ inch thick slices. Place them in a bowl of cold water and let it soak for about 5 minutes.
Preheat the air fryer for 5 minutes at 400°F/200°C.
Drain the potatoes from the water and pat them completely dry. Dry out the bowl. Make sure the fries are completely dry. Place the fries back in the bowl, add the salt.
Add the oil to the fries with the seasonings. (You can add more or less of the seasoning, it is completely to your taste. I recommend having more of the garlic, onion, and paprika over the oregano and chili powder. But feel free to experiment with your own favorite seasonings).
Stir to combine the seasonings with the oil and potatoes.
Place the fries in a single layer in the air fryer basket. Cook at 370°F/185°C for 12 minutes, shaking at the halfway point.
After 12 minutes, test the tenderness of your fries with a fork. If they need more time, cook for an additional minute or two at 370°F/185°C. If they are tender to your liking, bump up the heat to 400°F/200°C and cook for 2-3 minutes or until they reach desired crispiness.
Enjoy with your favorite dipping sauce! (I made a combination of mayonnaise and BBQ sauce).
Notes
Because every air fryer make and model is different, your cooking time and temperature may vary from mine. Just keep an eye on your fries, and test them with a fork. When they are tender and cooked through, they are done. If not, keep adding time until they are cooked to your liking.Next, add a little oil, bump up the temp, and cook for an additional couple of minutes and until the fries are crispy to your liking. Follow these steps and your sweet potato fries will be perfect!
