Ingredients

package chicken and apple sausage
cut into 2-inch slices

Brussels sprouts
halved

pound
sweet potato
cut into 3/4-inch chunks

tablespoons
avocado oil
or olive oil
zest of 1 lemon

cloves
garlic
minced

tablespoon
fresh parsley
minced (or 1 teaspoon dry parsley)

teaspoon
kosher salt

teaspoon
freshly ground black pepper

pomegranate arils
Instructions
Toss the sausage, sprouts, and sweet potato in a bowl
Stir in avocado (or olive) oil, lemon zest, garlic, parsley, salt, and pepper to evenly coat the sausage and veggie mixture.
Place in the air fryer and cook at 370˚ for 15-20 minutes, stirring halfway. Cook until veggies reach desired tenderness.
Sprinkle with pomegranate seeds and serve!
