For the marinade, whisk together all the ingredients except the chicken until well-combined.
To even out chicken, pound the thicker side down so chicken will cook evenly. OR butterfly chicken for more even cooking.
Place chicken in shallow dish or Ziploc bag and pour the marinade over the chicken, turning the chicken to coat evenly. Cover the dish and refrigerate for 8-12 hours.
Place chicken in the air fryer basket in a single layer, no overlapping. You may have to cook in batches.
Air fry at 380˚F/193˚C for about 10 minutes, turning at the halfway point. Depending on thickness, you may need to cook for 2-4 more minutes.. Cook until instant read thermometer inserted into center of thickest part of the chicken reads 160˚-163F.
Tent the chicken for 5-10 minutes to finish cooking (needs to reach 165˚F/74˚C, then slice and serve.
Notes
Cooking time may vary depending on air fryer and chicken breast size. Use a meat thermometer to ensure your chicken doesn't overcook and dry out.
