In a mixing bowl, combine rolled oats, coconut flakes, pumpkin seeds and flax seeds.
In a second bowl, add the coconut oil, honey, maple syrup, and salt. Stir to combine. They will combine easier if you heat them in the microwave for 15-30 seconds.
Drizzle the liquid mixture over the dry ingredients and gently toss/stir until evenly coated.
Place the granola in an even layer in the air fryer basket and air fry for 4 minutes at 340 °F
Use a silicone spatula to separate and mix the granola mixture within the air fryer basket.
Air fry for an additional 4 minutes and again stir the granola.
Air fry for a further 2-3 minutes, or until the granola is a light golden brown.
Pour onto a parchment lined cookie sheet and let cool completely. Enjoy with your favorite yogurt and berries.
