Instructions
Preparing for the Freezer:
Label 3 one-gallon freezer bags.
Rinse chicken and cut into 1/2 - 1-inch strips.
Divide chicken evenly among the 3 bags.
Combine peanut butter, juice concentrate, soy sauce, ginger, orange zest, and hot sauce in a medium bowl; divide evenly over chicken.
Into each bag measure about 1/4 cup of the chopped green onions.
Seal bag and shake gently to coat chicken and distribute green onions.
Remove air from bag, seal, and freeze flat.
Prepare after Freezing:
Thaw completely in refrigerator.
Heat grill to medium-low.
If using wooden skewers, soak them in water for at least 30 minutes first.
Thread chicken pieces onto skewers.
Several pieces can be woven onto a skewer and should be just touching each other, but not overly crowded.
Grill until chicken pulls apart easily and is no longer pink, about 10-14 minutes.
Discard remaining marinade.
Notes
Alternately, you can cook the skewered chicken on a greased broiler pan. Broil chicken 5 inches from heat for 10-14 minutes, turning frequently, until chicken pulls apart easily and is no longer pink.
