Prepare the sweet potatoes: wash and scrub your sweet potatoes so they are clean and free from dirt. Pierce with a fork, 4-5 times. Massage oil on the potatoes. Place in the air fryer basket and sprinkle with salt. Cook at 380°F/190°C for 35 minutes.
In a bowl, combine the chicken, corn, bell pepper, red onion, black beans with the oil and seasonings.
When there is 15 minutes left, add the chicken and veggies to the air fryer basket.
When there is 7 minutes left, stir the veggies and check on the chicken and sweet potatoes. Chicken needs to register at 165°F/74°C. The cooking time really depends on the size of your potatoes, so you will just have to watch it carefully. Adjust the time as needed.
Once the sweet potatoes and chicken are finished cooking, remove the sweet potatoes from the air fryer basket. Cut open the sweet potato and top with veggies, chicken, toppings, and enjoy!
