Add American cheese and stir until melted/blended.
Set aside and let it cool slightly.
Scoop approximately a third of a cup of the mixture onto center of the spring roll wrapper and spread out to form a small rectangle that stops about an inch and a half away from the left and right edges.
Using a brush, apply the egg wash across the top of wrapper. Fold over the left and right sides of the wrapper and then roll from the bottom towards the top, allowing the egg wash to seal the roll.
Place seam-side down in the air fryer basket. Lightly spray with oil and cook at: 380˚F/190˚C for 5-8 minutes or until lightly browned, flipping half way through cooking.
While the wrappers are cooking in the air fryer, mix together the dipping sauce ingredients until well combined.
Carefully remove the wrappers from the air fryer basket and enjoy with the dipping sauce.
