Place peeled and cubed potatoes in a large bowl. Toss the potatoes with the melted butter, thyme, salt, and pepper, until evenly coated.
Cook potatoes in air fryer at 380˚F/193˚C for 12-15 minutes, tossing halfway through, edges should be browned.
Transfer the potatoes to an oven-safe shallow dish that will fit in your air fryer. Spread potatoes to be in as much of a single layer as possible. Pour broth into dish and add minced garlic; stir to coat.
Cook in air fryer at 380˚F/193˚C for 8 more minutes. Carefully remove dish and let sit for a few minutes. Serve warm, pour any remaining sauce from the pan over the potatoes, and enjoy!
