Grate zucchini using a grater or food processor. In a mixing bowl, mix grated zucchini with a little salt and leave it for 10-15 min. Then squeeze out excess water from the zucchini using clean hands or using a cheesecloth.
Cook the potato in a microwave for 3 minutes. Then place in cold water for a few minutes. Peel and then grate or mash.
Combine zucchini, potato, corn, chickpea flour, garlic, salt, and pepper in a mixing bowl.
Roughly take 2 tbsp batter, give it a shape of a patty (about the size of your palm) and place them on parchment or wax paper. Lightly brush oil on the surface of each fritter. Preheat Air Fryer to 360˚F/182˚C.
Place the fritters in the preheated Air Fryer and arrange so that they are not touching each other. Cook them for 9 min.
Then turn the fritters and cook for another 4-5 min or until well done or till you get the desired color and crunchiness.
Serve warm with dipping sauce of your choice.
Notes
You can use any kind of flour really, as the purpose is to soak up some of the moisture from the ingredients.
If you use minced garlic from a jar, soak up some of the oil by placing the minced garlic on a paper towel first so you don’t add any more moisture.
Do not put wax paper or parchment paper in the air fryer!
