Peel and slice the apples into 16 slices per apple.
Mix together the flour and apple pie spice together in a bowl.
In a separate bowl, whisk together the eggs and vanilla.
Mix the apples and flour mixture together in a bowl until coated.
Take a baking sheet with a wire cooling rack on top of it and dump the apple/flour mixture on top of the rack. Let the extra flour mixture fall to the baking sheet.
Place the apples back in the mixing bowl and coat the apples with the egg wash.
Using the excess flour mixture on the baking sheet, coat the apples again with extra flour mixture.
Place the apples in the air fryer basket. Spray lightly with oil.
Cook at 330˚F/165˚C for 10-12 minutes, flipping halfway through.
Mix together the sugar and cinnamon in a bowl.
When the apples finish cooking, top with cinnamon sugar mixture and enjoy while warm! We love dipping the apples in caramel!
