Instructions
Place trimmed chicken thighs flat in between two pieces of parchment paper (or plastic wrap or even wax paper).
Pound the chicken to create a thin piece (to make chicken easier to fold and cook evenly).
Evenly spread a spoonful of pizza sauce on each piece of chicken.
Place cheese, 2-4 pieces of pepperoni, and onion slices on top of the sauce.
Optional, season with Italian seasoning, to your liking.
Fold one side of the chicken over onto the other and hold the chicken together with a toothpick or skewer (it stays together on its own once it’s cooked).
Preheat the air fryer at 400°F/200°C for 5 minutes.
Place parchment paper in the air fryer basket (optional: helps catch melted cheese) and set chicken in the air fryer to cook at 370°F/190°C for 6 minutes.
Check the internal temperature, and cook for 4-6 minutes more. Add cheese on the top of the chicken for the last minute or two.
Cooktime will vary depending on how thick your chicken thighs are. Use an instant read thermometer to ensure they are heated to an internal temperature of 165°F/75°C.
