Cook the uncooked rice in 2 cups of water on the stove.
Mix the seasonings together in a small bowl.
Add the frozen peppers and onion, frozen corn, black beans, oil, 1/2 cup enchilada sauce, and seasoning mixture together in a small to medium bowl. Stir until combined and evenly covered.
Transfer contents to a silicone pot.
Place the silicone pot in the air fryer basket. Air fry for 12 minutes at 370 °F, stirring contents every 4-5 minutes. Continue cooking until mixture is hot.
Combine the cooked rice with bean and corn mixture together in a bowl, to taste, you may not need to use all of the rice.
Lay out the tortillas. Add about 1/3 cup (or to taste) of mixture to a tortilla. Roll up the tortillas and place seam side down in a foil lined air fryer basket.
Repeat until air fryer basket is full of enchiladas (may need to cook in batches).
Spray the tops of the tortillas with oil. Air fry at 370 °F for 3 minutes.
Top with enchilada sauce and monterey jack cheese to taste (don’t use all of the remaining enchilada sauce if you are cooking in batches).
Air fry for an additional 2-3 minutes at 350 °F or until cheese is melted to your liking.
Remove from the air fryer basket and enjoy while the second batch is cooking.
