Cut chicken, onion, and bell peppers into bite size cubes. Combine together in a bowl.
Add 1/4 cup of Hawaiian BBQ sauce. (Add additional BBQ sauce, if desired, but you will add more later during the last couple minutes of cooking).
Cook at 380 °F for 10 minutes.
At the half way point, stir and add 1 can pineapple.
Check internal temperature of chicken, it should be near 165 °F.
Drizzle on more BBQ sauce and mix together. Spray with oil. Bump up heat to 400 °F and cook for an additional 2-3 minutes, or until veggies are charred to liking and chicken reaches internal temp of 165 °F. Add more as needed.
Remove, serve on rice. Add more BBQ sauce, as desired. Top with lime juice and/or sesame seeds if desired. Enjoy.
