Place cauliflower in an air fryer dish (I used a silicone pot). If there are any large frozen chunks of rice, break it apart by shaving it with a fork on the outside.
Air fry for 5 minutes at 350 °F to warm up the air fryer and the rice.
Add 1 cup of frozen vegetable mix. Stir to combine.
Add the sesame oil and soy sauce. Stir to combine.
Add garlic powder and ginger. Stir to combine.
Air fry for 5-10 minutes at 400 °F, or until rice is fried to your liking. I started with 5 minutes and added more time as desired.
