Grate the potatoes and onion on the large holes of a box grater. I ended up with 3 cups of shredded potatoes and about 1/4 cup of shredded onion.
Combine the potatoes and onions together. Then transfer it to a kitchen towel and squeeze out the moisture as much as possible.
Preheat the Air Fryer to 400 °F.
Place the potato mixture in a large bowl.
Add the eggs, panko crumbs, salt, and pepper to the potato mixture; stir until well combined.
Spray the air fryer basket with cooking spray.
Scoop out about 1/8 cup of the potato mixture into your hand, flatten it into a patty then place in the air fryer basket. Optionally, you can place the 1/8 cup of mixture into the air fryer basket and flatten it in the basket. Keep the latkes in a single layer in the air fryer basket. I was able to do 4-5 in my 5.8qt basket.
Spray the tops with cooking spray.
Cook in the air fryer for 8 minutes at 400 °F. Flip the latkes with a silicone spatula and cook for an additional 5 minutes, or until golden brown and crisp.
Remove and enjoy. Garnish with fresh chopped chives and serve with sour cream, apple sauce, or as is.
