Spray the air fryer basket and pour in the zucchini & tomatoes. Lightly spray the tops of the vegetables and season with salt and pepper. Cook at 400 °F for 5-6 minutes.
Stir in the corn and cook for an additional 2-3 minutes or until veggies reach desired tenderness and crispiness.
Make the salad dressing by combining the red wine vinegar, lemon juice, honey, and olive oil.
Remove from the air fryer basket and serve on top of spinach, or other leafy green of your choice. Top the salad with dressing and feta cheese.
