Place sliced chicken and frozen veggies in a mixing bowl. Drizzle oil over all and stir to coat. Dump mixture into air fryer basket. Sprinkle fajita seasoning over all, stir to coat evenly.
Cook in air fryer at 360 °F for 8 minutes. Stir contents.
Cook for an additional 5-8 minutes at 380 °F, until chicken is done and reaches 165 °F internal temperature.
Serve warm with tortillas or on a salad with your favorite fajita toppings, like cheese, cilantro, sour cream, avocado, guacamole, lime juice, etc.
Notes
Homemade fajita seasoning yields about 2 tablespoons - equivalent to 1 seasoning packet.
