Tasty Avocado Taco Bowl Recipe

This healthy taco bowl recipe is awesome! My husband even said this meal is probably in his top 5 favorite meals now! Whaa?! That’s a big deal. I have made a lot of different recipes over the years.

The healthy aspect is not a selling point for him either (or the other people I served it to) – they are all about taste and they all loved it! In fact, they have requested that I make it again when we get together in a few weeks. One of my husband’s comments about this taco bowl is that it is like a fiesta in his mouth. 😉

There are quite a lot of ingredients in this recipe (find the full list below), but they all work really well together! I’m usually not a huge fan of sweet potatoes, but they are really wonderful in this dish! I think the avocado and the avocado lime dressing are my favorite parts though.

The avocado lime dressing for this recipe is really easy to make. Just add all dressing ingredients to a blender and blend it up until your desired consistency. If it’s too thick you can add more water. This dressing would be a tasty, healthy option for any Mexican style salad!

Instructions

  • Preheat oven to 400°F/200°C. Let the 1/2 cup of frozen corn sit out to thaw.
  • Thoroughly wash the potatoes and cut them into 1-inch cubes. Arrange them on a baking sheet lined with parchment paper or silicone baking mat. Sprinkle with sea salt and black pepper. Bake for 25-30 minutes, turning once half way through.
  • While potatoes are cooking, cook rice according to package instructions.
  • Fluff rice with a fork and fold in corn.
  • Spoon the rice mix into 1/4 of a large serving bowl or platter, then add potatoes, lettuce, and avocado in the other sections of the bowl. Place tomatoes in the center and sliced onion over the lettuce.
  • Add all dressing ingredients to a blender and blend until mixture is well combined and at your desired consistency; add more water if needed. Drizzle over salad. Serve immediately.
