Stick of Butter Rice
Oh man, this recipe for a side dish is simply sinful! Â But oh so delicious!! Â Everyone loved it…there were NO leftovers!! Â This really was as good as the original recipe claims. Â Though, since it was a side dish, I wasn’t too turned off by there being a WHOLE stick of butter in it!! Â Sometimes you have to sacrifice some of your daily fat intake for some yummy flavor. Â We ate this rice with a lean pork loin and a nice salad, so no one felt too guilty for eating it! Â Next time though, I bet you could use half a stick of butter and it would still be tasty, with a little bit less guilt!
Serves 4-6 for about $0.60/serving
1 c. uncooked white rice (NOT instant)
1 (10 oz) can of Condensed French Onion Soup – $1.42
1 (10 oz) can of Beef Broth or Consomme – $1.50
1/2 c. of butter, sliced – $0.48
Preheat oven to 425 degrees.
In a 9×9 inch baking dish (I used one of my smaller rectangular dishes, and it came out great), combine rice, soup and broth.
Cut butter into slices and place on top of the mixture.
Cover with foil and bake for 30 minutes.
Remove cover and bake 30 minutes more.
