Spinach Artichoke Chicken

Another quick and easy meal to prepare, this chicken was excellent!!  Basically baked chicken with Spinach Artichoke dip baked on top.  Tasty!!

Serves 8-10 for about $1.00/serving

INGREDIENTS:

olive oil spray

8 chicken breasts – $5-6

13.75 oz artichoke hearts packed in water, drained (I had marinated ones, worked just fine) – $2.98

10 oz frozen spinach, thawed and squeezed – $0.89

2 shallots, chopped (I just used green onion, as that is what was on hand)

1 clove garlic, minced

½ cup Greek yogurt – $0.78

½ cup mayonnaise

½ cup Parmesan cheese

½ cup shredded mozzarella cheese

DIRECTIONS:

Preheat oven to 375º F. Spray baking dish with olive oil nonstick baking spray.

Place chicken into baking dish. Salt and pepper chicken and then bake 15 minutes.

Meanwhile, in a medium bowl, combine remaining ingredients.

 Pour on top of chicken. Bake 20-25 minutes.

Let stand about 5 minutes before serving.
