Easy slow cooker glazed carrots recipe

Slow cooker carrots are an easy holiday meal side dish!

Set it and forget it! Do a little prep in the morning, then just let the carrots slow cook. Voila! An easy, healthy side dish that is perfect for a holiday meal. Tender carrots with a touch of honey and fresh parsley – slow cooker honey glazed carrots!

A four-quart slow cooker is just the right size for this recipe. And I love using slow cooker liners for easy cleanup!

About three pounds of carrots will serve around eight to ten people. I’m telling ya, you gotta try out slow cooker carrots as a side dish for your next large family meal or holiday!

Cooking the peeled and sliced carrots in a simple liquid of water, sugar, and salt help the carrots to retain their flavor and subtle sweetness. A fail-safe method for get nicely cooked carrots in the slow cooker every time!

This simple honey glaze is a great option for cooked carrots. In fact, as I stir in the softened butter and honey, I am reminded of honey butter. Um, yum! I mean, it makes sense that it would smell like honey butter since honey and butter are both involved, but pouring that over carrots is genius. Honey and butter are almost always a good combo in my opinion.

Of course, you can use any type of glaze you want. The variations are endless! Keep in mind that it is a nice touch to stir in a fresh, minced herb before serving.

Serve the slow cooker carrots right away or leave them in the slow cooker on warm setting for an hour or two until dinner is served, if needed.

Instructions

  • Combine carrots, water, sugar, and 1 teaspoon salt in slow cooker.
  • Cover and cook 4-6 hours on low, until carrots are tender.
  • Drain carrots, then return them to slow cooker. Stir in honey, butter, and parsley. Season with salt and pepper to taste and serve.

Recipe Notes

This dish can be kept in slow cooker on warm setting for 1 to 2 hours before serving; loosen with additional hot water as needed before serving.

  • I would love to make this without the sugar…how do you think I could? Use more honey? or do you think that the 1 tbsp even matters that much?

    • I haven’t tried this recipe other than how it is written, so I don’t know for sure how it would turn out. Adding more honey would be an option – honey flavor can sometimes be overpowering, but it is only 1 Tbsp, so maybe it would be fine. Another option would be to sub for a different type of sugar, like maple syrup, coconut sugar, stevia or something like that?
      This grilled glazed carrot recipe is good and doesn’t have refined sugar. Not sure if it would work in the slow cooker too or not though.
      Let me know what you try and how it turns out!
