World’s Best Banana Bread
I hate wasting food about as much as I LOVE saving money (and that’s a lot!). We eat a lot of bananas in my family, but it always seems there are a few from the bunch that go bad before we can get to them. I make this once a week. I have tried a bunch of recipes over the years, but this is my hands down favorite. My family gobbles it up!
2 cups flour
¾ cup white sugar
¾ tsp baking soda
½ tsp salt
3+ VERY ripe bananas- equal to 1 1/2 cups after being mashed with fork
¼ cup vanilla pudding or yogurt
2 large eggs slightly beaten
1 tsp vanilla
6 tbsp butter, melted and then cooled (I melt mine when I start and throw it in the fridge to cool)
(You can also throw in nuts or chocolate chips if you want, but we prefer ours plain)
Preheat oven to 350.
Combine dry ingredients and set aside.
Mash bananas and then mix in remaining wet ingredients (don’t forget your cooling butter in the fridge). Stir well using a wooden spoon only.
Add dry ingredients and stir until blended. Pour into greased bread pan.
Cook for 1 hour or until knife inserted into middle comes out clean.
