Waffles and Buttermilk Syrup
My kids love waffles and until a few months ago, l was buying Eggos in mass at Costco. I knew I could make healthier, cheaper waffles myself so I searched for a good recipe and found one on Money Saving Mom.
Whole Wheat Waffles
1 3/4 cup whole wheat flour I use 1/2 white and 1/2 wheat.
2 Tablespoons sugar
1 Tablespoon baking powder
2 eggs
1 3/4 cup milk
1/2 cup oil or melted butter Money Saving Mom says she uses 1/2 oil and 1/2 applesauce, which I tried and like.
1 teaspoon vanilla
Mix together dry ingredients in one bowl. Lightly beat together wet ingredients in another. Add egg mixture to dry ingredients and stir just until moistened. Pour batter onto lightly-oiled waffle iron and bake until done. Makes approximately 6-8 waffles.
Here’s a yummy syrup recipe that came with my husband when I married him!
Buttermilk Syrup
2 c. sugar
1 c. butter
1 c. buttermilk
1 Tablespoon White Karo Syrup
Combine into a saucepan and boil 5 min., then remove from heat.
Add:
1 teaspoon vanilla
1 teaspoon baking soda – syrup will double in size when baking soda is added
Stir well and serve over pancakes.
