When it comes to food, my family clamors for anything Mexican.  If there’s a little salsa on top, it’s a big hit!

Turkey Quinoa Fajita Meatballs with Chile Cheese Sauce

With a house full of active, hungry, grand-kiddos, I wanted to make something healthy and tasty for our dinner.  I also had some ground turkey and leftover quinoa I wanted to use.  Turkey Quinoa Fajita Meatballs with Chile Cheese Sauceis a quick fix, (about 45 minutes).  It was easy for them to eat, and topped with tasty salsa.  I served it over a bed of brown rice with fresh avocados.  I think it would also be delicious served like a tostada on a corn tortilla with shredded lettuce.

Here are the two Kraft products I purchased for my recipe.  I have been a fan of Kraft Natural Cheese for years and often use all the varieties.  The Kraft Recipe Makers were new to me.  The one I purchased included one recipe on the outside of the box and 2 inside.  I will definitely be making another trip to Target with my Kraft coupons to buy more of these for my pantry.

Ingredients

  • For Meatballs
  • [/ffd_title]
  • 1 (14.6-ounce) box Kraft Recipe Makers, Tex-Mex Chicken Fajita variety
  • 1-1/4 ground turkey
  • 1 cup cooked quinoa
  • 1/2 medium onion, diced
  • 2 cloves garlic, minced
  • 1/2 green pepper, diced
  • 1 to 2 Tablespoons Zesty Lime Fajita Simmer Sauce, (included in Kraft Recipe Makers)
  • 1/4 cup cilantro, chopped
  • 1/4 teaspoon ground cumin
  • 1 Tablespoon fresh lime juice
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 egg, beaten
  • For Cheese Sauce

  • 3 Tablespoons butter
  • 3 Tablespoons flour
  • 1 (4-ounce) can diced green chilies, drained and rinsed
  • 2 cups milk
  • 2 cups, (1 package), Kraft Naturals Mexican Style 4 Cheese
  • For Garnish

  • Sour Cream
  • Chipotle & Tomato Salsa, (included in Kraft Recipe Makers)
  • Cilantro, chopped

Instructions

  1. Preheat oven to 350˚degrees.
  2. Use a large lined non-stick baking sheet, or grease it really well.
  3. Saute onion, garlic, green pepper over medium heat till onion is limp and garlic is fragrant.
  4. In a large mixing bowl combine ground turkey, cooked quinoa, vegetables, Zesty Lime Fajita Simmer Sauce, cilantro, cumin, lime juice, salt and pepper and egg together.
  5. Using a cookie size scoop, form meatballs.
  6. Place on prepared baking sheet, placing evenly.
  7. Bake until the meatballs are firm to the touch and cooked through, about 20 minutes.
  8. While meatballs are cooking make Chile Cheese Sauce.
  9. In a non-stick skillet over medium heat, melt butter.
  10. Add flour and whisk together, cooking until bubbly.
  11. Add the chiles and milk stirring until it thickens and whisk in the shredded cheese.
  12. Stir over low heat until cheese is melted and sauce is smooth.
  13. Do not boil, just keep warm.
  14. Serve over a bed of brown rice, 4 to 6 meatballs per serving.
  15. Top with Chile Cheese Sauce and garnish with sour cream, Chipotle & Tomato Salsa, and chopped fresh cilantro if desired.
  16. Yields 8 to 10 servings.
