Tomato & Avocado Salad

I love this healthy addition to a dinner party or any potluck! So easy & most of the ingredients came out of the garden!


My favorite kitchen ‘toy’ to use when making this is my herb scissors! It cuts the cilantro & green onion in no time!

  • 3 medium avocados
  • 5 large tomatoes
  • 2 cucumbers
  • 3 green onions
  • 1/4 cup chopped cilantro
  • 3 Tbsp lime juice
  • 1/4 cup olive oil
  • Pinch of salt & pepper


  1. Chop onions, tomatoes, avocados, & cucumbers to bite size pieces. In a separate bowl mix cilantro, lime juice, olive oil, salt & pepper. Pour dressing mix over vegetables. Stir together. Serve over lettuce or eat plain.
