Tomato & Avocado Salad

Ingredients

  • 3 medium avocados
  • 5 large tomatoes
  • 2 cucumbers
  • 3 green onions
  • ¼ cup chopped cilantro
  • 3 Tbsp lime juice
  • ¼ cup olive oil
  • Pinch of salt & pepper

Instructions

  • Chop onions, tomatoes, avocados, & cucumbers to bite size pieces. In a separate bowl mix cilantro, lime juice, olive oil, salt & pepper. Pour dressing mix over vegetables. Stir together. Serve over lettuce or eat plain.
