I love campfire food!  There is just something about cooking in the outdoors over a campfire that makes everything taste divine!  These Three Cheese Foil Wrapped Potatoes are an easy side dish to prepare with a hotdog or another main dish that you have cooked over the fire!  They are easy to make but they taste delicious!

Three Cheese Foil Wrapped Potatoes

With its bacon and cheese flair, this side dish makes a welcome addition to barbecues as well and can easily be cooked in the BBQ grill! Or you can use the oven rather than a grill. Make it to go with oven baked chicken or hamburgers. It will cook faster if you pre-cook the potatoes and onion in the microwave for a few minutes first  then it will cook up while the hamburgers are browning. Nice thing about these is you can add or delete just about everything (except the potatoes ) and it still comes out delicious!

If you are headed out to do some camping this summer or 4th of  July, these potatoes make a welcome addition to any campfire meal! They are easy to prepare and even easier to clean up!  Even my pickiest eaters like this one!  That is my kind of camping food!

Three Cheese Foil Wrapped Potatoes

Ingredients

  • 3 large potatoes, peeled and cut into 1-inch cubes
  • 1 medium onion, chopped
  • 3 tablespoons grated Parmesan cheese
  • 1 tablespoon minced chives
  • 1/2 teaspoon seasoned salt
  • 1/4 teaspoon pepper
  • 2 tablespoons butter
  • 1/2 cup crumbled cooked bacon
  • 1/2 cup shredded part-skim mozzarella cheese
  • 1/2 cup shredded cheddar cheese

Instructions

  1. In a large bowl, combine the first six ingredients. Transfer to a double thickness of greased heavy-duty foil (about 18 in. square). Dot with butter.
  2. Fold foil around potato mixture and seal tightly. Grill, covered, over medium heat for 15-18 minutes on each side or until potatoes are tender.
  3. Carefully open foil. Sprinkle the bacon cheeses over potato mixture. Grill 3-5 minutes longer or until cheese is melted. Open foil carefully to allow steam to escape.
